M2 beef muscle with celery

Beef well seasoned and tender, Chinese-style cuts with connective tissue cooked to gelatinous, but irregular sizes and a dry 'end piece'. Crisp celery stalks, but not enough. Flavorsome spicy numbing sauce.

Ambience
Background music at a good level, but limited and cramped seating, dark interior, and a smell of cumin permeating everything. Dishes served in take-away containers.

No chili oil at the table — Sriracha. Black vinegar at the table.
