Sweet and sour spicy noodle with brisket

Broth has good flavor with ok sourness and spice, the best part, but could be more fragrant. Soybean overly dry and chewy, not crispy. Brisket: 5–6 small pieces, a touch dry but beefy in a boiled-cow way.
